{"id":6945,"date":"2020-11-24T01:03:30","date_gmt":"2020-11-24T01:03:30","guid":{"rendered":"http:\/\/staging.kaukauchronicles.org\/?p=6945"},"modified":"2020-11-24T01:03:30","modified_gmt":"2020-11-24T01:03:30","slug":"nl96j82l7bp6y3b","status":"publish","type":"post","link":"https:\/\/staging.kaukauchronicles.org\/?p=6945","title":{"rendered":"Moussaka (Serves 6)"},"content":{"rendered":"<div class=\"sqs-html-content\" data-sqsp-text-block-content>\n<p class=\"\" style=\"white-space:pre-wrap;\">Melt in a frying pan:<br \/>1 T. butter or margarine<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Cook in butter or margarine until clear:<br \/>1 large onion, chopped<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add:<br \/>1 or 2 cloves garlic, chopped<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add and cook until meat changes color:<br \/>1 lb. ground beef, salt and pepper to taste<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add and continue cooking until meat:<br \/>1 can tomato sauce or 1 cup is almost done tomato puree<br \/>1\/4 t. cinnamon<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Mixture should moist but not soupy:<br \/>1\/4 t. sugar<br \/>little Ajinomoto<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add Just before meat is ready:<br \/>1\/4 to 1\/2 cup dry wine (Sherry or Sauterne)<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Meanwhile, heat to smoking cooking oil 1\/2 inch deep in a frying pan.<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Beat to foam:<br \/>2 eggs<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Add and beat in:<br \/>2 T. flour<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Slice about 1\/2 inch thick:<br \/>2 large round eggplants<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Dip eggplant slices in egg batter and fry in hot fat until golden brown.<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Drain both sides of slices well on absorbent paper.<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Grate:<br \/>1\/2 lb. yellow cheese<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Heat oven to 350 (moderate).<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Beat untfl foamy:<br \/>4 eggs<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Assemble in an ungreased baking pan or casserole as follows:<br \/>1. Eggplant slices overlapping to cover bottom well, salt and pepper.<br \/>2. Thin layer of grated cheese.<br \/>3. Meat sauce.<br \/>4. Eggplant slices, salt and pepper<br \/>5. Remainder of grated cheese.<br \/>6.
