Malasadas #4

3# flour – 12 cups
2 cakes yeast
8 or 12 eggs
1 can milk (dilute to make 1 qt.)
1 tsp. salt
1 block butter
1 to 1-1/2 cup sugar

Dissolve yeast with warm water (1/2 cup). Sift flour. Add well beaten eggs, sugar, salt and yeast. Mix all together with milk as needed. Dough must be very soft. Then cover and set aside to rise. After dough has risen, with a circular motion, turn dough and get aside to rise again. Heat oil for cooking doughnut using 1 to 2 quarts of oil. Drop dough into heated oil by spoonful at a time turning until golden brown.
