Plain Pancake

Heat griddle slowly while mixing batter.

Beat well:
1 egg

Beat in:
1-1/4 cup buttermilk or sour milk
1 tsp. sugar
2 tsp. soft shortening
1-1/4 cup sifted flour
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt

Beat with rotary beater until smooth.
Pour batter from tip of largtt spoon (one pouring) or from pitcher, in pools a little apart (for perfectly round cakes). If it is necessary grease griddle very lightly.
Turn pancakes as soon as they are puffed and full of bubbles.
Turn and brown on other side.
