Sesame Stir-Fried Mushrooms
An interesting appetizer or garnish for beef, poultry, fish or Chinese dinners.
Makes two (2) cups
1 oz. dried Japanese forest mushrooms (shiitake)
3 Tbsp. unsalted butter
3 Tbsp. peanut or vegetable oil
1/2 tsp. sesame oil
1/2 lb. mushrooms, sliced
1/4 c. sesame seeds
3 Tbsp. dark soy sauce

Soak dried mushrooms in small bowl in enough warm water to cover for 30 minutes.

Drain; squeeze out excess liquid.

Remove stems and discard.

Cut caps into 1/2 inch slices.

Heat butter and oils in large skillet over medium-high heat.

When very hot, add dried ad fresh mushrooms and cook 3 minutes, shaking pan constantly.

Add sesame seeds and soy sauce and continue cooking until heated through.

Serve hot or at room temperature.
