Half-Pint Mayonnaise

1 egg yolk
1/2 teaspoon salt
1/2 teaspoon sugar (optional)
1/2 teaspoon dry mustard
Dash of cayenne
1 to 2 Tablespoon vinegar or lemon Juice
1 cup salad oil

In a small, deep, round bottomed bowl, mix the egg yolk with the seasonings. Stir in 1 Tablespoon vinegar or lemon Juice. Add a few drops of oil and beat briskly With a rotary beater until thoroughly mixed. Continue adding the oil a few drops at a time, beating well after each addition, until about 1/4 cup of the oil has been used. Beat in remaining oil 2 tablespoon at a time. Beat in additional vinegar or lemon Juice if mixture becomes too thick. Makes about 1 cup dressing.
