Pineapple Nut Bread

2 cups sifted flour
1/2 cup sugar
1 tsp. baking powder
1/2 tsp. salt
1 cup raisins
1/2 cup walnuts, coarsely chopped
1 egg, beaten
1 tsp. vanilla
2 tbsp. melted shortening
1 #1 crushed pineapple, (1 cup) do not drain
1 tsp. soda

Sift the flour, sugar, baking powder and salt into a bowl. Add raisins and nuts. Combine the egg, vanilla and shortening; add to mixture. Dissolve the soda in pineapple and add. Stir until just blended. Pour into a greased 8″x4″x4″ loaf pan and bake at 350 F. about one hour or until done. Cool on rack. Serve it buttered, or spread with cream cheese.
