Curried Salmon Eggs

18 eggs, hard cooked

2 – 6-1/2 oz. cans of salmon

2/3 c. mayonnaise

1 Tbsp. catsup

1 tsp. pimento, finely chopped

1 tsp. green pepper, finely chopped

1 tsp. onion, grated

1/4 tsp. curry poweder

Chopped parsley

Drain salmon and mash. Cut eggs lengthwise and place yolks, salmon, catsup, mayonnaise, pimento, green pepper, grated onion, and curry powder in bowl. Mix and chill well. Garnish with parsley. Yields 36 appetizers.
