Shoyu Chicken

1 chicken – 3# dressed
1 cup soyu
1 cup water
1 piece ginger
1/2 cup brown sugar
2 cloves garllc
1 tsp wine

In large sauce pan mix sugar with soyu. Heat about 2 tbsp. oil in frying pan and add ginger and garlic; fry whole chicken till slightly browned; add wine then place chicken into the soyu-sugar mixture. Cover and cook slowly until tender. Turn chicken from time to time to get an even brown-ness. Cut into 1-1/2 inch pieces and serve.
