Tasty Fried Chicken

This is an easy way to prepare chicken for a buffet or picnic.

Cut into pieces for serving:
A young roaster about 3-1/2 lbs. or two broilers

Place in a paper bag:
1/3 cup flour
1/2 teaspoon salt
Dash of pepper if desired

Add the chicken and ahake the bag vigorously. Remove chicken from bag when thoroughly coated with flour.

Heat in heavy skillet:
1 inch of fat

Brown chicken on all sides and place in a large deep pan.

Bring to a boil in a separate pan:
1 cup shoyu
1/2 cup sugar
1/4 cup sake or sherry wine (any liquor will do) May be omitted
1/4 teaspoon garlic juice (use garlic press)
1/2 teaspoon fresh ginger juice (use garlic press)

Pour liquid over browned chicken. Toss chicken over and over to evenly distribute sauce. Serve.
