Chicken Papaya

2 frying chickens, cut up (or parts)

1 c. flour

1 tsp. seasoned salt

1/2 lb. melted margarin

1 c. orange juice

1/2 c. brown sugar

1 Tbsp. cornstarch

1 Tbsp. soy sauce

1/2 tsp. salt

2 c. fresh papaya, sliced

Garnish of choice: Chopped parsley, green pepper, or sesame seed

Shake chicken in bag with flour and salt. Oil large baking dish with two tablespoons margarine. Place chicken in dish and brush with remaining melted margarine. Bake 50 minutes at 350 degrees or until brown.

Combine juices, sugar, soy sauce, salt and cornstarch. Bring to a boil, stirring constantly. Remove from heat when clear and thickened and add fruit. Pour mixture over chicken and bake 10 minutes longer. Garnish. Serves 6 to 8.
